Recipe for canelés

 

- Preparation : 15 minutes

- Cooking : 1 hour and five minutes

- Rest : 24 hours

 

 For 4 people :

 

- 50 cl whole milk

- 50 g butter

- 1 vanilla pod

- 2 eggs

- 2 eggs yolks

- 200 g of sugar powder

- 100 g flour

- 1 tablespoon of rum

 

1) Heat the milk with the butter pieces and vanilla bean, split and scraped. Mix well.

 

2) Beat the eggs ( yolks and whole ) in a bowl with the sugar and add the flour.

 

3) Pour the milk into the mix and filter. Mix the dough and refrigerate for 24 hours.

 

4) Preheat the oven therm 8 (240°). Add rum into the batter, then pour into fluted molds.

 

5) Bake the cakes for 5 minutes, then lower the oven, 6-7 (200°) and let it cook for 50 minutes to 1 hour.

 

6) Let cool thoroughly before you unmold and serve on a plate.
